Kori Kajipu ( Mangalore chicken curry)

Mangalore    June   29:


Ingredients:
1/2 kg Chicken
1 and 1/2 cup chopped onion
1 cup grated coconut
2 cups coconut milk
11-12 red chilies
1 and 1/2 tsp chopped garlic
1 tbsp corriander seeds
1 tsp jeera
1/4 tsp methi seeds
7-8 cloves
2 cinnamon
6 peppercorns
Tamarind extract - 1/2 tsp
1/4 tsp turmeric
Ghee

Method:
1.Roast red chilies,cloves,pepper corns,cinnamon,corriander seeds, jeera and methi seeds .
2.In a kadai,heat ghee and add half of the chopped onions . Add garlic. Fry till the onion turns translucent .Now add the grated coconut and fry till the coconut turns brownish. Grind this along with the dry masala and tamarind to a smooth paste.
3.Cook the chicken in coconut milk along with 1 cup water.Add the remaining raw onion to the cocunet milk and cook till the chicken pieces are tender.
4.Now add turmeric, ground masala ,salt and cook for about 10 mins till the gravy slightly thickens.
